Tell me

What are you cooking for dinner tonight? Go ahead, Leave me all your secrets. The requirements: Simple, inexpensive, ~30/45 mins and not over 10 ingredients, oh and Yep I am watching my sugars ....

updated - Amy reminded me that all crockpot meals/recipes are greatly appreciated too because I consider those good to go too!

Well...this takes more time...but pulled pork. 2lbs pork tenderloin, a 12 ounce can of root beer...into a crock pot for 7 hours or so...pull apart and mix with your fave BBQ sauce.

Fried rice. Cook some rice (you'll have to go light on the rice, for the sugars, but I do feed this to Matt), scrambled a couple eggs, cut up all the vegetables you've got. I'm putting ground chicken in ours too. Just throw it all in a big pan and stir fry it with a little teriyaki sauce.

gonna make chicken pot pie the crust isn't great for the sugars...right now i am roasting a pack of chicken breasts...then I am going to put them into a pie crust, mix it with a can of cream of chicken, half cup of milk, a bag of frozen mixed vegetables, cover with another pie crust...then I will pop it into the oven to cook at 350 for 30 minutes...sort of like thishttp://allrecipes.com/Recipe/Chicken-Pot-Pie-I/Detail.aspx

Takes a bit longer than that to bake, but the prep part is fast.

Salsa Meatloaf:

1 lb ground beef
1.25 c salsa
3/4 c oatmeal
1 carrot, shredded
1 can diced tomatoes, drained
1/2 c mushrooms, chopped

Spray loaf pan. Mix all ingredients and dump in pan. Bake at 350 for 70 minutes, then let stand 10 minutes before slicing. For the salsa, use chunky or plain, hot or mild, whatever you like.

Honestly. Um, tonight - he opened a can of baked beans and threw in some microwaved hot dogs. Katherine had cheese, pears, and a variety of puffed grains. I think she got a butter cookie for dessert.

Greek Chicken wraps -
Chicken breast (cooked), feta cheese, olives, mild banana peppers -- panini style.
(well not exactly dinner tonight - is tomorrows).

tonight we had grilled top round steak that I marinated in light beer and adobo seasoning, grilled potatoes, and salad. Not very exciting :) Usually we just eat the steak on top of the salad but my dh wanted potatoes today.

do you guys like fish?? This is super easy

Chop up some onion, garlic, and dice a zucchini and squash. Saute the onion and garlic, then add zucc and squash. Add can of diced tomatos and then we put in a jalepao for some heat but you don't have to. Throw the fish on top (cod, tilapia, whatever is on sale) and cover the pot. Let it all cook together until the fish is cooked through.

Super easy, done in under 30 minute and I love the clean up of one pot meals!

Smoked sausage (I just buy the Hillshire Farms beef brand), steamed green beans and red potatoes and corn. Takes me 15 minutes. The smoked sausage is heated in a frying pan for 7 minutes. I buy the green beans and red potatoes in a steamer bag from the produce section from walmart, it comes with a cream butter sauce in it and steams in the microwave in 4 minutes. The corn is also frozen, green giant steamer bag in a great sauce. It is delicious and super freaking fast!

We had beef soft tacos tonight. 1 lb. of beef (we often use ground turkey), package of seasoning, tomatoes, lettuce, cheese, sour cream, salsa, refried beans. That is about it, I think. Not our fanciest meal, but it beats S.O.S.(shit on a shingle). Yes, I make that too.

We must sound like we live a glamorous life. :)

We also had burritos last night. :) And like Jen, we do fried rice, but usually if we have it left over from another meal.
I'm not informed on what's bad sugar-wise, so I'm not sure I can help much!
Tonight, I'm going out and hubs is on his own!

Last night we had grilled pork chops with a basil,tomato, garlic rub, with salad, and veggies.
Tonight it's either going to be tacos or spaghetti (with Dreamfield's pasta)
I don't have to watch my sugars at this point, but do anyway since I don't want GD.

Last night was bad, but tonight we had Amy's Pesto Pizza.. whole grain crust.. pesto sauce, cheese, roma tomatoes and broccoli. VERY yummy. takes like 15-20 mins to cook in the oven. VERY easy. :)

I'm just cheating and looking at all of your girl's imputs! But I have to say I love Jen's fried rice recipe. Try that one ((hugs))

1 lb. ground turkey (or beef)
1 can of tomato soup
2 cups rice
1 soup can of water
black pepper to taste

Mix all these ingredients together, cook until rice is cooked. If you want to, make meatballs out of the meat--and roll it in the rice--that makes it what its called--Porcupines.

Great post! One of my favorite quick meals to do in the crock pot is. . .

4 chicken breasts
1 cup of any salsa
1 cup water
1 tbs taco seasoning

Put it all in the crockpot on low heat for 8 hours or med to high heat for 4 - 6 hours.

Shred the chicken with two forks once it is cooked.

Use it for soft shell tacos or a great taco salad. I sometimes throw a can of black beans in about an hour before we want to eat dinner. . . makes a great filling for enchiladas, too!
